Pecorino Foglie Noce

Pecornio Foglie di Noce is a pressed sheep’s milk cheese from Tuscany. While aging, the wheels are wrapped in walnut leaves and rubbed daily with olive oil, imparting a tremendously satisfying flavor and hint of black walnut. Hearty and rustic, Pecorino Foglie di Noce is visually striking, versatile, and absolutely delicious. Leyden

We Just add a new cheese to our cheese Case here at Tomato Sunshine. This is a Traditional, farmhouse, hard cheese made from cow’s milk. It is a boulder-shaped cheese with brushed, natural rind which is either rubbed with annatto or “painted” with red plastic. The curd is colored with annatto and mixed with cumin seeds before being pressed and washed in brine. The cumin provides an aromatic flavor that contrasts well with the creamy, nutty character of the cheese. The cheese is quite similar to Gouda but is more drier.

Moliterno al Tarfufo

We Just received lots of great cheeses for the weekend one in particular is Moliterno al Tarfufo. Moliterno al Tartufo is a moderately sharp, beautifully aged cheese with intense truffle flavor. Made of sheep and goat’s milk in Sardinia, this cheese is aged and then injected with black truffles for more aging. The result is irresistible flavor and texture. Perfect to star alone as a cheese course with red wines or dessert wines. If you love Truffles and semi sharp cheese you will just love this one. I give this ***** (5 stars) best new cheese of the summer!

Appenzeller

Appenzeller cheese is a hard cow’s milk cheese from the Appenzell region of Switzerland. It has a distinctive tangy, slightly fruity flavor which pairs well with fresh fruit, some wines, and other cheeses. Like many heritage cheeses, Appenzeller cheese has a appellation of controlled origin, meaning that only cheese made in a particular way by certain producers can be labeled Appenzeller cheese. What makes Appenzeller cheese highly unique is the brine solution, which includes a mixture of herbs and spices. These saturate the cheese, lending it a distinct and unusual flavor. In addition, the cheese is regularly washed in wine or cider while it cures, adding a fruitiness to the cheese as well.
